A “Hollandaise” sauce with additional Isigny cream and tangerine… it’s neither a “mikado” nor a “mousseline”… but it’s a toothsome combo. (back of cod, eggs, lemon, tangerine, garlic, salt, pepper, green asparagus, carrots)
